Roast Vegetable Recipe

Ingredients


Onions , small cut into 8 pieces 1 no
Red pepper, deseed and cut into dices 1 no
Yellow pepper deseed and cut into dices 1 no
Courgette , cut into baton 2 no
Aubergine, cut into baton 1 no
Garlic , chopped 2 cloves
Olive oil 1 tbsp
Vinegar 1 tbsp
Salt, pepper to taste
Fresh rosemary
Fresh basil

Method

1. Place all vegetable into a roasting tray sprinkle with olive oil and vinegar, Season lightly with salt & pepper.
2. Sprinkle with rosemary and basil.
3. Place in preheated oven at 180 degree C for approx. 15 minutes.
4. Serve immediately.
